Andrew, this sounds great. We cook with olive oil a lot. Do you use the
firm tofu for this? I’ve been making "shakes" with the soft tofu with
blueberries and a little splenda. For lunch today I had some chocolate
soy milk that has 1 net carb and 3 grams of fiber.
Some docs don’t care for soy, and my naturopath told me to stay away
from the isoflavones. I don’t think this soy milk has isoflavones.

Thanks for the info on tofu. To be honest I’ve only tried it once at a
vegetarian restaurant and it tasted like chicken. Why do vegetarians
make stuff that tastes like meat? Anyway, I’m going to try eating a
vegan diet for a bit because when I look at my diet now it is high in
meat and dairy and my weight isn’t budging AT ALL, so vegan
alternatives may just do the trick. My catch 22 right now is that my
doctor is waiting to see how I do on my own to decide whether he lets
me go on Byetta. If I start this now and my numbers drop, he won’t put
me on it, which I think could drop my numbers and weight even further.
Hmmm not sure what to do.
so the soy milk is lower carb than the hoods lc milk? i think hood’s is 4
net carbs. i miss milk but the hood’s is so expensive and getting harder to
find.

meds at all? Or controlled solely by the vegan diet
and exercise? What was your A1c? What caused you to
start Byetta?
I sometimes dip in mustard then in cornmeal and fry it. What you have to
remember about tofu is that it is practically tasteless on its own, but it
take on the flavors of what ever you cook it with. I have an excellent
recipe for Sweet and Sour "Chicken" where tofu replaces the chicken. Also,
I like the flavored tofu’s that you can buy already seasoned.

Mash it up and add stuff and it can make a great dip, assuming you
find something to dip in it.
If you freeze the firm tofu IN THE WATER AND CONTAINER that it comes in, it
gives the tofu a more chewy texture. I do this whenever I purchase tofu.
Also, it’s important to squeeze all the moisture out of the tofu before you
use it. To do this I place the tofu on several sheets of paper towels then
more sheets of paper towel, then a plate on top of that the 3 large cans of
veggies on top of that to "PRESS" the moisture out. Just keep changing the
paper towels until no moisture remains. If I don’t have veggies, I use
several cook books.

In my quest to get off dairy, I just tried Almond "milk" today. It was
pretty darn good! Make sure you get the unsweetened variety. It comes
in Plain (what I tried), Vanilla and Chocolate. I heard the chocolate
one is good in coffee, but the plain was good in coffee too…gave it
a nutty taste.
Mmmm I LOVE Almonds! You know what sounds really good?
Use the almond milk to make the sugar free hot chocolate then add some of
the Davanci coconut flavored SF syrup. Would be like an Almond Joy! I may
have to see if I can find some of that milk! OR!!! Just thought of
this….How about making SF chocolate pudding with the almond milk and
adding the sf coconut syrup to that? You could also freeze that to make
popsicles!

Thanks for posting this, Jodi. My naturopath wants me to eat 40 grams of
protein a day. I’m exploring how to make tofu taste good. <g>

Not sure why but reminds me of the scene in Blazing
Saddles where the cowboys are out in the middle of

pretty darn good! Make sure you get the unsweetened variety. It comes
