It would probably help you a lot to read some of
Bernstein's explanation. A huge portion of his low
carb diet book is excepted online, here:

********************************************************************
I think if I had to follow a diet like the one listed in this book, life
wouldn't really be worth living for me. I can't imagine forever doing without
all my favorite foods (even most fruits and vegetables!) to eat what he lists
as acceptable. My blood sugar has been staying in a pretty normal range just
eating a normal diet and taking metformin and Byetta. That allows me to
have a normal life and to not feel different from the people around me. It
makes my diabetes no big deal and no inconvenience. Janet

There are 9 calories per gram of fat, and 4 calories per gram of
protein and carbohydrates. (To figure the carbs, you need to drop out
the fiber listing on the package.)

So simply:

1800 calories
70% fat = 1260 calories
20% protein = 360 calories
10% carbohydrates = 180 calories

1260 calories/9 = 140 grams fat
360/4 = 90 grams protein
180/4 = 45 grams carbohydrates

<!--more-->
For this, you could eat about 10 TBS of olive oil, 2 chicken breasts,
and 2 large apples FOR THE DAY.

It is highly unlikely that you could get the actual nutrition (in
terms of vitamins and minerals) that you need for the day.

I know that eating extremely high fat diets are very successful in
treating certin hereditary birth defects which would be otherwise
fatal, but there are much more balanced ways of eating. If you DO
decide to do this, remember that eating as much as ONE gram of
transfat is worse than almost anything else you can do.
